Really makes a difference!

I replaced my old toxic griddle pan and I am amazed at the difference of how my pancakes cooked. So evenly and so light and fluffy! Same old recipe, just a new pan! Love Green Pan, but I am so confused on the different lines of pans and what the differences are.
