Sharpness

Love rhe weight and feel of the knife but th re’s a learning curve when cutting. Out of the box it did not feel sharp enough to cut carrots so I honed the blade and it performed better.

Beautiful knife. Stays sharp for

Beautiful knife. Stays sharp for long. If you heavily prep though I suggest getting a ceramic honing. They dull out after heavy prep for a couple of months.

Blade artistry at it’s finest

I bought this knife when I became a sous chef almost 7 years ago and it is still the sharpest knife that I own. She’s battle-tested and still just as beautiful as the day I got her.
